LENNON CHOWDER

1/2 lb Russett Potatoes
1/4 oz Chilantro
1/4 cup Turkey Broth
6 oz Carrots
1/3 lb Mild Cheddar
2 Bouillon Cubes
4 tsp Margarine
A dash of salt
A dash of pepper
2 tsp Sweet Vermouth

Cube potatoes into about 1x1x1x1 in. Cut carrots into arbitrary hexagons. Grind cilantro into fine powder. Boil vegetables in water until tender. Dump all the other ingredients into a big bowl. Mix. Heat at 350 degrees for 10 minutes. Add vegetables to mix. Stir. Serve fresh. Enjoy.

Irish Cream Cheesecake

Ingredients

Chocolate Cookie Crust
- 11 cream-filled chocolate sandwich cookies, crushed
-3 tablespoons butter or margarine, melted

Irish Cream Filling
- 24 ounces cream cheese
- 3/4 cup sugar
- 2 1/2 tablespoons unsweetened cocoa powder
- 5 teaspoons cornstarch
- 4 eggs
- 1 egg yolk
- 3/4 cup irish cream
- 1 teaspoon vanilla extract
- 2 teaspoons instant coffee
- 2 teaspoons hot water

Directions
1. Make the crust: in a bowl, stir the crushed cookies and melted butter together until well combined.
2. Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan.
3. Make the filling: in a big bowl, combine the cream cheese, sugar, cocoa powder, and cornstarch; beat with an electric mixer until smooth.
4. Add eggs and egg yolk one at a time, beating well after each addition.
5. Beat in the Irish cream liqueur and vanilla.
6. Stir together the instant coffee and hot water, stir into cream cheese mixture; pour cream cheese mixture over the crust.
7. Bake in a preheated 350° oven for 15 minutes; decrease temperature to 200° and bake 1 hour and 10 minutes or until the center no longer looks wet or shiny.
8. Remove the cake from the oven and run a knife around the inside edge of the pan.
9. Turn the oven off; return cake to the oven for an additional 30 minutes.
10. Chill, uncovered, overnight.

I love this thread. Unfortunately my wife took our recipe books to Michigan with her. I have some pure good deliciousness to share with you once I get up there next week and get to them though..... I have a crab/crawfish cake recipe that I got from a cookbook put together by congregation of a New Orleans church. Hot fuck, when I make it, my table turns into that dinner scene from What About Bob.

JOHN BURGER

1 lb Meat
3 tsp Chives
1 tbsp Margarine
1 Slice Swiss Cheese
2 tsp Ketchup
1 tsp Mustard
2 leaves Lettuce
1 slice Tomato
2 rings Onions
1 Jumbo Wheat Bun

Dump meat, chives, and margarine into a pot. Stir. Cook in oven at 450 degrees until it looks like a burger. Place burger on wheat bun. Place cheese on top. Add the other stuff. Enjoy.

I KNOW!! My wife's grandmother lives in New Orleans and attends this church, and when she came to visit, the cookbook got "lost" at our house. It's all cajun/southern goodness. I know, dick move on our part, but she can get another one!

88 KICKIN QUICHE

Ingredients:
5 pounds bacon
1 big or 2 medium onions, minced
1 pint whipping cream
1 block Swiss cheese, shredded
6 to 10 eggs
1 Tablespoon dry mustard
1 Tablespoon ginger, ground
1 Tablespoon nutmeg
5 to 6 drops Tabasco pepper sauce to taste (or salt and pepper)
4 to 5 pie shells
butter

Fry and drain the bacon well (with lots of paper towels). Crush/crumble the bacon. Sauté the onion in butter until the center is clear and the edges start to brown. Drain well in a strainer lined with paper towels. In a large mixing bowl, whip the cream, nutmeg, ginger, dry mustard, and Tabasco. Add and whip in the eggs, onion (cooled), bacon (cooled), and cheese. Pour into pie shells and bake in a preheated oven at 375 degrees F. Serve with champagne, a light Riesling, or orange juice.

JL'S "FAMOUS" CARROT CAKE

1 lb carrots
9 oz Semi-Sweetened Chocolate
2 lb Dough
2 tsp Sweet Vermouth

Shove the carrots and chocolate into the dough, and mold it into a "cake" shape. Bake at 375 degrees for 30 minutes. Make sure to wear an oven mitt when you take it out of the oven or else you'll burn your hand. Pour vermouth on top. Enjoy.

"MAD DOG" LENNON'S CHOCOMANIA SOUFFLE

1 tbsp Sugar
1/2 cup Processed Cocoa
1/4 cup Flour
1/4 cup Butter
1 cup Milk
1/2 cup Brown Sugar
1 tsp Vanilla Extract
4 Eggs
2 tbsp Cane Sugar
6 scoops Coffee Ice Cream
2 tsp Sweet Vermouth

Heat oven to 350 F. Butter 6-cup souffle dish; coat with 1 tablespoon sugar. Stir together cocoa and flour in medium bowl. Add butter; blend well. Heat milk in medium saucepan until very hot. Reduce heat; add cocoa mixture, beating with whisk until smooth and thick. Remove from heat; stir in 1/2 cup brown sugar and vanilla. Cool slightly. Add egg yolks, one at a time, beating well after each addition. Gradually add sweet vermouth throughout beating. Cool to room temperature. Beat egg whites in a big bowl until foamy; gradually add 2 tablespoons cane sugar and continue beating until stiff. Stir small amount beaten whites into chocolate mixture; fold chocolate mixture into remaining whites. Carefully pour into prepared dish. Bake 40 to 45 minutes until puffed. Serve immediately with scoop of ice cream.

WHAT'S EATING GILBERT GRAPE PIE

2 1/2 cups Seedless Grapes
3 tbsp Melted Butter
2 tbsp Flour
3/4 cup Sugar
1 9 inch Double Pie Crust with Pastry
2 Marshmallows

Preheat oven to 425 degrees F (220 degrees C). Wash fully ripened grapes. Separate the grape pulp and skins. In a sauce pan over medium heat cook grape pulp slowly until soft. Rub cooked pulp through a sieve. Combine the sieved pulp and grapes skins. Mix the flour and sugar together and add to grape mixture. Stir in the melted butter and marshmallows and pour into one 9 inch unbaked pie shell. Cover top with strips of pastry. You can make a lattice pattern if you want, I don't care.. Bake at 425 degrees F (220 degrees C) for about 25 minutes. Enjoy.

Chicken Pineapple Fajita's

8 6-inch flour tortillas
4 1-inch slices peeled fresh pineapple
1 lb. skinless, boneless chicken breast halves
2 small red or orange sweet peppers, seeded, cut in strips
2 tsp. Jamaican jerk seasoning
1/8 tsp. ground black pepper
1 Tbsp. cooking oil
Fresh cilantro and lime wedges

1. Preheat oven to 350 degrees F. Wrap tortillas in foil and heat in oven. Meanwhile, coat a 12-inch nonstick skillet with cooking spray; heat over medium-high. Add pineapple slices; cook 4 to 6 minutes, until browned, turning once. Remove.

2. Cut chicken in strips; toss with sweet peppers; jerk seasoning, and pepper. Heat oil in skillet; add chicken and peppers. Cook and stir over medium-high 4 to 6 minutes, until chicken is no longer pink. Core and chop pineapple. Serve with chicken, tortillas, cilantro, and lime.
